Meat glue: An ingredient to fear or cheer?

In the wake of the “pink slime” scandal that had many burger-lovers questioning just what was between their buns, the meat industry has been working to preclude another scandal over the use of a product with the unappetizing name “meat glue.” But is the prospect of "gluing" scraps of meat together to turn trimmings into an appealing steak really reason to fear or cheer?
