Salted Black Cocoa Sables with Caramelised White Chocolate Chunks

I feel like this post needs to start with an apology to my fellow British bakers because to make this exactly as written will be a little bit tough. Black cocoa, the elusive cocoa used to make Oreos and of course this sable cookie, is a little tough to track down here at home in Blighty Right now, i
