The human uses of birch in addition to medicine include nourishment in the form of nutrient-rich sap for sweetener, able to be tapped in spring like maple syrup.
First harvest birch twigs and leaves. Be sure to identify the birch tree correctly. Next separate the twigs from the leaves. You can dry the leaves and use later. Cut the twigs/stems into smaller pieces about half an inch. Finally add 1/4 cup of twigs to a quart jar and top with hot water. Steep for 8 to 12 hours and strain. Enjoy hot or refrigerated, will last in the refrigerator for 10 days.
